My granny always cooked her pumpkins down. She'd make pumpkin bread, pumpkin rolls, and her homemade pumpkin pie is the ONLY pumpkin pie I like. I need to ask my mom how to find that receipe...I have a pumpkin that we were supposed to carve and never got around to.
we took the pumpkin, WHOLE, and put them without the lids into the oven at like 350/400 i think... about an hour or hour & a half later, when it was wilted and really ugly looking, we pulled it out and let it cool... then we peeled the pumpkins,.. if they are done cooking, the skin comes off quickly with just your fingers... mush it together in a big bowl and then put into ziplocks in 4 cup sections...
i didn't use walnuts... instead i added lots of choc chips.... i also added a teaspoon of vanilla ( i saw it in another recipe and thought it sounded like a good addition)

This sounds like a plan to me! Thanks for sharing!! I have 4 pumpkins and would hate to see them go to waste! Do you deseed the pumpkins and atke out all the gook? I'm assuming yes right? Also- what about a bigger pumpkin- slice it then put it in the oven??
yes... remove stem & i removed the seeds and gook bc i had them carved... i would imagine that you are supposed to do so, but honestly i don't know... as for cutting it up, i know you can do that... my mom said she used to cut it into small pieces and boil it until someone told her about this.... it was soooo easy this way bc i had to do NOTHING... we put two into the oven as soon as the trickortreating was over... my pumpkins were HUGEEEEE... i just took a shelf out of my oven and put them on a cookie sheet each... don't forget the cookie sheet or you are going to have a TON of gook and "juice" in your oven and won't be able to remove the pumpkin
