I use pretty much any kind of potato (red, russet, yukon), washed and quartered (peeled if you prefer). I also use an onion or two quartered, and then carrots and celery. I usually just salt and pepper the roast, but do sometimes throw in garlic powder, or a little fresh minced garlic.

I do potatoes, carrots, onions and celery. I brown the roast in a frying pan before putting it in the crock pot and I season it with salt and pepper. I put the meat and veggies in the crock pot and mix 1 packet onion soup mix with 1 cup water and pour it on top of the meat and veggies. Cook for 8-10 hours. Mmmmm!
