**MrsJohns** bakery advice from a cake designer

hey sweets - you can totally make this casino cake on your own.

I'm a cake designer for Whimsical Bakery, so I'll help you out via the internet as best as I can.

Go to Michael's and pick up some fondant. It's easy to use, and it comes in all sorts of colours so you can play with your theme.

Do a two layer 10" cake, and a two layer 12" cake, whichever flavour Grandma would approve of.

Fill and frost with a buttercream icing, and put in the fridge over night to let the frosting set. This will make for a sturdier cake.

The next day, roll out your fondant....I would probably suggest red on the 12" and black on the 10". Cover the cakes individually, and then stack them. Usually, ribbon around the bases of each cake will cover any cutting mistakes, and we find that using a pizze cutter works better than a regular knife.

You can make casino chips out of cookies or fondant using a roung cookie cutter. Just make sure that when you stack them, you cover them or they will crack when they start to dry out. If you want to put them on the cake, just put a dab of water on the back of the "casino chip" and then place it on the cake - this will make it stick.

There are all sorts of fun things that you can add that you can find at Michael's in the cake design aisle: sparklers, pearlized dust, edible sparkling sugar. Have fun with it! I would probably just make casino chips out of chocolate or the fondant, a few playing cards out of fondant (they also sell fondant dye that you can use as paint and just use a clean paint brush to paint designs on the cake or chips or cards). Maybe add some fondant stars for a little pizzazz!

I hope that helps!! If you have any questions, please please let me know!

  • lol it's fun!! I actually made a casino cake, 4 stacked 8" poker chips, for DH's bff's bday in February. It kinda looked like this, but the chips were pink and brown cause I didn't buy predyed fondant and it took forever to dye it myself. The top chip said "25" on it.

If I were to do it again...I wouldn't off centre any of the chips. It looks neat, but it makes the cake sag on the sides that are hanging over. (in this picture, the bottom cake is compressed because of the weight of all of the cake - they didn't put supporting dowels in it)

  • Thanks hun! You are the sweetest!

I am a pretty good baker. It's more of a time issue than anything to be honest. There is a lot that needs to be done before the party as far as other food etc goes and I am super anal about my cakes. Plus with the RE and IF I just don't really know if I want to be adding that to my plate since I'm not sure what our deal is coming up and if I will be a hormonal mess. I just don't want to be crying on the casino cake, it woudl ruin the fondant, lol.

I really really do appreciate it though and will definitely (I always spell that word wrong) ask you about other cakes in the future because I am just learning how to use fondant. I made my own a few months ago and it left much to be desired!

  • lol no worries! the poker chips took me two evenings and one day to do, while hosting the party at our house - and it was a surprise party to boot!

Thursday - bake cakes and freeze them

Friday - frost cakes with buttercream and let set in fridge

Saturday - get up early, do the fondant work and decorate the house etc.

It was a big job! If you have the time, do it, but if not - order away! Or maybe do a cupcake tower? With fondant poker chips on top?

lol we are of the same mind. I suggested it but the mom and aunts stamped a rejection on it!

Pretty cakes are so. much. work. People don't appreciate it enough!! :)

  • compromise with a small 6" cake on top, and then cupcakes for everyone else? You can make the toppers well in advance, a week even!
  • psssh, make poker chips. I'd totally throw some of these on it

you do make the whole thing sound so easy though Shan, I really need to play with fondant and get comfortable with it.

(eta: those are chocolate poker chips)

it's really not too hard (that's what she said) once you get used to it. It takes alot of elbow grease though - it's a marshmallow based product, so it's hard to get it all rolled out thinly and whatnot!
