how far in advance would you make them or keep them in the freezer before eating? ive got plenty of recipes but they dont say how long the food can stay before the taste/texture is compromised. id like to start making a few things but im thinking its too soon.

I'm not sure about how long they will keep, but I did freeze some homemade soup the other week & when I thawed it out the potatoes kind of turned to mush. So my suggestion for meals with veggies, would be to let thaw in the refrigerator & not use the defrost on microwave or under-cook your veggies just a bit so they aren't mushy when defrosted in the microwave. Just a suggestion! although this won't pertain to a raw casserole type dish that you can just throw in the oven.
I'm going to start making mine around 35-36 weeks.
I would undercook the veggies a bit too if you are freezing...
I'm starting around 35 weeks for chili's, soups.
And around 37 for casseroles, and lasagnes.
