TTC after 35

Help me out here....Thanksgiving.

So it's thanksgiving here in Canadaland this weekend! Y-U-M.

DH is great and all, but my one true love is gravy. Shhh don't tell him.

Anyhoo, I am looking for suggestions for a side dish that is (or includes) a green vegetable. The traditional is cabbage (bletch) or brussel sprouts (not a favourite) so I am throwing myself on your mercy for some suggestions.

  • I love Thanksgiving.  And you should feel no shame, gravy is good so long as you don't eat it every day.

    Here are my suggestions:

    Broccoli Cheese Casserole, Green Bean Casserole, Green Beans with sauted onions and bacon (yum!!), steamed asapargus - with hollandaise sauce if you want to fuss.

  • I love this asparagus recipe from allrecipes.com:

    • 1 bunch fresh asparagus, trimmed
    • cooking spray
    • salt and pepper to taste
    • 2 tablespoons butter
    • 1 tablespoon soy sauce
    • 1 teaspoon balsamic vinegar
    1. Preheat oven to 400 degrees F (200 degrees C).
    2. Arrange the asparagus on a baking sheet. Coat with cooking spray, and season with salt and pepper.
    3. Bake asparagus 12 minutes in the preheated oven, or until tender.
    4. Melt the butter in a saucepan over medium heat. Remove from heat, and stir in soy sauce and balsamic vinegar. Pour over the baked asparagus to serve.
  • My mom makes a yummy broccoli salad with a dressing and bacon. It is wonderful! I am going to have to get the recipe from her soon. Have a wonderful Thanksgiving!

    I always like to have one fresh, healthy item to load up my plate with. My favorite is blanched green beans with a pat of butter, coarse salt to taste and lemon zest. Some minced parsley is pretty on top.

  • Ditto Green Bean Casserole.

    And I loved it when I lived in Vancouver... 3 years of celebrating Canadian AND American Thanksgiving. Hooray for stuffing, gravy and pie!

  • We tend to keep Thanksgiving pretty simple at my house.  This is last year's menu:

    • Turkey Soup w/ cheese tortellini
    • Roasted Turkey w/ pan gravy
    • Roasted white & sweet Potatotes- Season w/ olive oil, chopped rosemary, S &P.  Bake uncovered so potatoes brown and cover w/ foil until serving.
    • Green beans- Boil for 6-8 min, adding salt after boiling 3min (keeps them green). Season with olive oil chopped garlic, chopped flat leaf parsley, S &P
    • Sauted Mushrooms and Peppers. Slice assorted mushrooms and colored bell peppers saute in olive oil, sliced garlic, S&P.
    • Huge tossed green salad w/ vinegrette
    • Coffee and assorted pies
