I've been doing way too much meal planning and grocery shopping and coupon cutting and using southern savers and spending so much time on it that I burned out on it this week and am now lacking complete and total motivation to plan my meals for this coming week.....so pls post your meal plan, either for this past week or the coming week!

I'm doing WW but so far I have:
pork tenderloin, balsamic squash and zucchini and a WW herbed flatbread recipe
steak w/ spaghetti squash and salad- or I might do some kind of shrimp scampi w/ the spaghetti squash and do steak and baked potatoes another night.
some kind of fish, I think grouper, with a tomato and caper sauce with couscous w/ pinenuts and spinach
this past week we had
grilled chicken caesar salad (WW) w/ baked sweet potato,
grilled chicken w/ baked potato topped w/ broccoli with cheese sauce, steak w/ orzo w/ sundried tomatoes, capers, spinach, radicchio and parmesan (kind of a copy cat of Macaroni Grills orzo, it's delish
oh, and I made that Butternut Squash and Bacon mac-n-cheese
I am so over meal planning and cooking in general..

and maybe my white bean chicken chili again... since it was so yummy the other night.
I don't meal plan (but should), but I've been trying to make meals that require just 20 minutes prep and not very long to cook so that we can all eat together before Sam goes to bed. I usually make 3 big meals and have leftovers twice a week. I also make a big batch of salad dressing for spinach salad and prep the other ingredients for it so that we can eat it all week long without too much effort.
I'm in a rut but these are my current faves:

This spinach salad dressing (I use blue cheese, strawberries or frozen blueberries, and sugar-cinnamon pecans as the topping instead of HOP)
This chicken - tender and easy. I use mustard or 1/2 mustard 1/2 mayo instead of mayo though
Bertolli pasta with rigatoni and broccoli b/c Sam LOVES the broccoli (I stock up when it's on sale for $4.99)

P.S. my tip for meal planning is to first create a huge list of every type of entree that you know how to make. Go through all your cookbooks, recipe box, etc. and type up a huge list. Then each week, I just look at what's on sale and use this list to guide my shopping :-)
