Since its FREEZING here today, I'm trying to figure out how we're going to pack our little guy in his seat for winter. Do you think these types of things are safe? Or no?

Bundle Me's are not safe for use in carseat either. It actually will void the warranty of a carseat. Consult your carseat manual, it explicitly says to not use after-market products with the carseat. And, this product is considered an after-market product.
I think I've also heard tricks about if you put your child in(no coat) and adjust the straps accordingly, then put their light coat on and put them in again if the straps still fit appropriatly you're okay. So if it is a light sweatshirt or jacket it would probably work.

You want your LO to be able to be strapped in without what he's wearing being strapped in to the car seat itself.
Because you're not supposed to put bulky clothes on them for the car seat.
Nothing that the carseat straps thread through is safe.
