By the end of the day it seems that my supply dwindles because DS decides he wants to nurse every hour and a half or every hour and he doesn't seem as satisfied after feeding as he does in the morning. I have started pumping once in the morning and I know I am producing milk then, but I do not know why my supply would dwindle through the day. I feed DS every 2 hours (more if he demands it) and I was just wondering if anyone else had experienced this and if anyone knew a way to help maintain supply. Also, could it have to do with the fact that I have a hard time finding time to eat in the middle of the day? Thanks all!

Cluster feeding in the evening is very typical. It doesn't mean that you have a supply problem, it's just a way that babies find comfort and get through the evening "crankys". :-)
There is a growth spurt in the 2-3 week range. So he could be acting frustrated and nursing more often because he's trying to signal your supply to increase. If he's still acting fussy after eating in another week there might be a supply problem, but for now I would just let him nurse on demand and trust your body (as long as he's having plenty of wet and dirty diapers, of course).
Definitely make sure you're keeping yourself well-hydrated and well-fed. I know that it is hard when you're taking care of a newborn, but it is important for your health and for your supply. A PB&J sandwich is well-balanced, high in protein and easy to eat while your DS is nursing. I would also carry a water bottle around with me all day, drink decaf coffee or tea and grab cheese sticks, carrot sticks or just a slice of bread to fill me up. I also got good at making myself a bowl of instant oatmeal with one hand and eating it - good for supply and for filling you up!
