I just made a quiche the other night. I love quiches becuase you can use whatever you've got handy.
Line a pie pan with pie crust (I always use the store bought kind but if you want to make it yourself you could). Bake at 400 for 5 minutes or so.
Put cooked meat and vegetables & cheese in (last time I used some leftover pulled pork, mushrooms, spinach and onions)
Mix eggs (about 4 depending on size) milk or cream and a little flour. Pour on top of meat mixture and bake for 35 minutes or till the eggs are firm throughout.
Enjoy.

I also make them without crust (not for entertaining just for DH and I) so we can have it with whole wheat toast and avoid the buttery crust. But the buttery crust sure is good!
