If you are having an auction or event of some kind, things made by the kids are always BIG sellers. For example, each class makes a paper with all their handprints on it, or some other work of art, and you have it framed (you can just get a frame with mat in it already so it's much cheaper) than auction it off. If you're not having an event, parents could buy raffle tickets to enter a drawing for the item.
When I was on the Drill Team in High School we made and sold apple pies right before Thanksgiving and it was a huge sucess. They were uncooked and could be frozen so they could just be pulled out and cooked hot and fresh whenever. We presold them and then borrowed a church kitchen to make them. We spent the whole day pealing apples and assembling pies and then we delivered them to straight to the people who ordered them.
FInd a bookcase on craislist, refinish and paint it, trace the kids hands on the outside and painr, and then have each of the kids bring in a favorite book or two. Sell raffle tickets or auction it off.
Baked goods also sound REALLY good right now.

I was trying to think of something seasonal, so how about gourmet dipped apples? The supplies shouldn't be too costly: apples, wooden sticks, caramel, chocolate and then whatever toppings you want (candies, nuts, sprinkles - you could make them Halloween colored if you're selling around that time) then wrap them in cellophane baggies. The kids might be able to help you dip in the toppings if they're supervised, if it needs to be something the kids were involved in too:

Fall - Art Show/Baked Goods Silent Auction. Take 2-3 pieces of art from each kid (less or more depending on how many students). Mount the pictures on black construction paper, and a label with their name, age, class. Display around the room. Set up desserts/baked goods with auvtion bidding sheets. Invite everyone in the kids family!
Spring - Carnival/Goodie Basket Silent Auction. Carnival like games (ball pit, balloon pit, ride on toys following a taped road, fake tatoos, noodle necklaces, etc). Each class put together a theme basket of goodies (art, camping, gardening, etc) and then those were on display with silent auction bidding forms.

Probably more for adults although the kids would participate if it made sense. Since they only do one fundraiser every 2-3 years, they try to raise a lot of money to be used over the next couple of years. Last time they did a dinner and auction but I'm concerned with the economy being down, people may have less disposable income to spend at an auction.

I always love bake sales! You could also host a swap and sell! I am sure there are lots of mamas that would love to do a swap and sell!
