I am gaining too much weight. Cooked vegetables are totally nasty to me right now so I've been eating a lot of fruit, but I think it's just too many carbs in general so I need to find some better snacks. Thanks!

I don't consider fruit to be bad carbs unless you are eating too many of them. I usually get about two to three pieces a day.
Otherwise, try edamame; low-fat cheese; beans; tofu; protein shakes; milk; plain Greek yogurt (fat-free and has VERY few carbs or sugar); cup of chicken soup (watch for sodium), etc.
This exactly. I live for Greek yogurt too. The vanilla one is so so good with granola.
Myloplex protein shake (they are already made): i put in blender w/1/2 a banana. Sometimes I'll buy a strawberry and vanilla and mix w/a banada..I just drink 1/2 at a time; one in am one in pm
1/2 apple or pear or serving of fave fruit w/string cheese, a serving of almonds, almond butter or natural peanut butter
Yogurt, I make a little parfait out of it.
Kashi cereal isn't too bad, it is filling too
On the High Risk board, this topic is discussed often since so many of us there have gestational diabetes and so are restricted in our carb intake.?
My current favorite low carb snacks are cottage cheese, certain granola bars, and raw veggies with dip. I also found a diabetic yogurt by yoplait, and sugar free popsicles for when I have a sweet craving.
donuts. Just kidding.
Almonds, edamame, string cheese, celery w/ peanut butter, pita chips (ok a little carbs there) w/ hummus, cherry tomatoes/black olives/mozzarella on little sticks- when I have these with a glass of Martinellis, it's my own little happy hour.
-I make chicken meatloaf in muffin tins so that I have small servings that are easy to carry
-Greek yogurt with almonds and a little honey (1 serving of fat free greek yogurt has 90 cals and 15 grams of protein)
-Low fat or fat free cottage cheese - one thing that I love that some might think is weird is cc w tomato, garlic and basil. Cottage cheese is also super easy to mix into pastas
