Thinking stuff like mac and cheese, pancakes, waffles...........things that DS likes but I would like to start making myself. Also if you have found good methods of freezing stuff that makes large quantities I'd like to know that too.

These are milk-free and gluten-free, but they are sooooooo good.
Apple Muffins
1/4 cup margarine or shortening (I use benecol because it's milk-free)1/3 cup sugar3 cups oat flour1/2 tsp salt4 tsp baking powder1 cup soy milk (alternatively, you could use rice milk so that these muffins are soy-free)2 cups finely chopped apples (I almost always use granny smiths)**I also like to add a generous sprinkle of cinnamon or apple pie spices to the batter**cinnamon sugar
Mix margarine or shortening and sugar. Add oat flour, salt, and baking powder. Mix in soy milk. Add apples. Fill muffin cups about 2/3 full. Sprinkle cinnamon sugar over the batter.
Bake at 400 degrees for 25 minutes. Makes about 24 muffins. ETA: This recipe is from Sofie-Safe by Emily Hendrix.
Here's another one - can you tell we love apples in our house? Zachary gobbles these up every time I make them. This recipe is milk-free.

Waffle iron, wisk or strong fork, 2 mixing bowls
Ingredients
1 large or two small apples (I use granny smith), grated
Dry ingredients:
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/8 teaspoon cloves
Wet ingredients:
1 cup applejuice
3/4 cup soymilk
1/3 cup applesauce
2 tablepoons corn oil (canola or veg oil will do)
4 Tablespoons sugar
2 teaspoon vanilla
Directions
Preheat waffle iron.
Sift together the dry ingredients in a large mixing bowl. In a medium bowl, mix together all the wet
ingredients (including sugar) until well combined. Create a well in the center of the flour mixture and slowly blend in the wet ingredients until combined. Fold in the grated apple.
Make your waffles according to manufacturers directions. I use a belgian waffle iron and 1 cup of batter per waffle works for me, but you should consult your directions. For crispier waffles, let cook 30 seconds to a minute longer than the directions suggest.

my waffle recipe:
Mix together:

1 tsp. baking powder
1 tsp. baking soda
2 eggs
1/3 cup vege oil
2 cups buttermilk
1/8 tsp salt
put about a half a cup of batter in waffle maker (depending on the size of waffle maker) And i like mine pretty thick! This recipe has NEVER let me down!

I make these all the time and they are great. I also add some vanilla and cinnamon to the batter. It makes a ton so if it is just for us 3 I will cut the recipe in half and freeze the leftover cooked pancakes. I let them cool first then stack them with a piece of wax paper in between them so they don't stick together and freeze them in freezer bags.
It looks like you have several good pancake recipes already. I was just going to give a freezing tip for them and tell you that my DD LOVES the "Pink Pancakes" from Jessica Seinfeld's book Deceptively Delicious. I don't have the recipe with me at work though.
I always make a triple batch and lay them on a cookie sheet to cool. Then I put the cookie sheet in the freezer and "flash" freeze them a little, maybe 15 mins or so. That way when you put them together in a ziploc freezer bag they won't stick together. Then you just take one out and pop it in the microwave for 45 seconds and you have breakfast. So good for them and so easy for you (well once you have made them)!
