No lemon juice and I let it sit out for a good 20 min. or so to cool off before I put it in the freezer and fridge.
Why let it cool?
Not sure the exact science behind it, but general food saftey guidelines call for not putting hot food in the freezer. It should be cooled to room temp as quickly as possible though, either by putting the bowl in an ice bath or just seperating the food into smaller portions (freezing tray) so it cools more quickly.
