If you've made your own applesauce come in

Do I need to add any lemon juice to keep it from turning brown? I make and freeze in ice cube trays. Any advice?

  • i didn't use any and was fine. But, I had to act quickly when chopping, steaming, pureeing and then freezing.

  • No lemon juice and I let it sit out for a good 20 min. or so to cool off before I put it in the freezer and fridge.

    Why let it cool?

  • I didn't use any lemon juice and they turned out just fine.  I just put it in the trays when I was done pureeing and put it in the freezer.

  • I didn't need to add any lemon juice and mine did not brown but I did cook them first so that may have made the difference.

    Why let it cool?

    Not sure the exact science behind it, but general food saftey guidelines call for not putting hot food in the freezer.  It should be cooled to room temp as quickly as possible though, either by putting the bowl in an ice bath or just seperating the food into smaller portions (freezing tray) so it cools more quickly.
