I assume you don't have margarine? It won't be an ideal replacement because it contains more water, so the cookies will be limper, but it will work. I always make my chocolate chip cookies with a mix of butter and shortening (half and half). I find it makes them fluffier.
You can replace butter when baking but it's harder with cookies because they need the air. You can replace it with oil but your cookies are going to be flatter and you'll need to watch them when they're baking because they could overbake. I've also read that you can replace butter with natural peanut butter but obviously that will make your cookies taste like pb. Since you said you have some butter, the oil thing might be worth a shot because you could use some butter and some oil.
Applesauce will only work with things like muffins, cakes and breads. You can't sub it for cookies.

I wouldnt put applesauce in cookies, either. BUt if the recipe called for melted butter (I know a couple of cc recipes that do) you could just use oil. wont taste as nice but it'll work. If it wants you to cream softened butter and sugar, though, I don't think it would work quite as well.
