The veggie lasagna- I made it for DD's b-day last year and it was such a hit with her and the adults. My in-laws are total meat people (particularly my FIL) and they said it was the best lasagna they'd ever had.

I haven't tried many of the recipes ... I'm just too much of a stickler for things tasting good!
But the refried bean dip is yummy!
Oh, but Bright, you couldn't be more wrong! These dishes are delicious!!! DH and I are pretty proficient cooks, and we can't believe how flavorful these "healthy" recipes are. They'd be great for your DH and his DM.
I've only made a couple of her recipes. I went the easy route and mixed butternut squash into Amy's organic mac & cheese and it really isn't very good. Jack will eat it while Ben and I do not like it at all.
I also made the cauliflower & parm scrambled eggs. I didn't put the full amount of cauliflower that it called for but they were still awful and tasted really strong.
I may make the tofu nuggets for dinner tonight. I'm in the mood for tofu. I'm always in the mood for tofu though.
