AWing my Coop Bounty! (PIP)

This was my first time purchasing from the co-op? I bought the Organic Basket for $25, added the Conventional Italian Bunch for $7.50, and paid $3 for a first-time purchase.  About $35 and I got:

1 Bunch of Carrots
3 Lbs Jewel Yams
3 Stocks Broccoli
1 Bag Grapes
8 Green Bell Peppers
1 Cantaloupe
5 Bartlett Pears
2 Mangoes
7 Tomatoes
9 Plums
3 Crook-neck Squash
3 Lbs Ginger Gold Apples

Conventional Italian
1 Eggplant
2 Yellow Onions
1 Red Onion
1 Head Garlic
2 Zucchini
8 oz. Mushrooms
1 Bunch Parsley
1 Bunch Basil & Rosemary

Now I just have to figure out how to use it all!  So? anyone know what to do with Kale??Huh?

  • So beautiful!  It's easy to eat healthy when you have all that.  Someone posted a green quiche the other day and I think she said you could use any kind of greens, like kale.  It sounded yummy.

    If you like eggs, I'd do the greens quiche someone suggested.

    Otherwise, my favorite use for kale is in soups (add it somewhere between 5-15 min before serving, and you can freeze it if you cook it in bulk).

    Also, the apartment therapy food blog often has good leafy greens recipes (and they're beautifully honest when things just flop, too, which I love) you could check out for ideas.

  • Hubby sometimes cooks kale the same way you would broccoli rabe:

    sautee garlic (lots!) in a good bit of olive oil in the bottom of a gigantic pot. Add kale (or rabe), put the lid on, and swirl the pot around for a bit. eventually you can lift the lid and the greens will have nicely wilted & become covered in garlicy goodness =)
