DD is almost two and eats just about everything, but is still messy with silverware. I have to pack a lunch for her, but daycare won't heat the food or help feed her and they never remember to put on her bib. so no yogurt, applesauce, macaroni, etc. unless I want to wash an extra outfit every day. I've bought an ice pack, so I'm comfortable sending her with things that should be kept cool (they don't refrigerate either). . . .but I can only send her with so many PB&Js or cheese sandwiches. Any other ideas for lunches? What do you send (if you pack a lunch)?

Thanks. . .I should have said that the one thing she won't eat is meat, including fish, beef, pork, etc. Sometimes we can get her to eat chicken, but only if she has something to dip it into and then the daycare doesn't like it. Eggs give her horrible gas, so we avoid. And the daycare has said no hummus; too messy. This is why I'm at such a loss.
Wow, your DC doesn't sound very accomodating. Your DD isn't even 2 yet & they are making her feed herself completely? Yikes.
To answer your real question, here's a list of things I make for DS at preschool. Not sure how many will work for you, but it might give you some ideas.
Mini Pizza, Quesadillas (refried beans, guac & cheese, shredded chicken & mild salsa), Salmon cakes, Sandwiches ( Deli Meat & cheese, Egg & Cheese, Grilled Cheese, soy butter & jelly), Pinwheel Sandwiches (Tuna & mayo, Cream Cheese & minced wafer-thin ham, Mashed egg & Mayo, Goat cheese & avocado, Grated cheese, Thinly sliced turkey with cranberry sauce, Soy butter, Swiss cheese & chutney, Ricotta cheese & honey, hummus), Mini Cheeseburger, Meatballs/sticks (Chicken & Apple Bites, Tuna Bites, Veggie Croquettes, Mini Golden Fish Balls, Lamb Meatballs), Pasta ( w/ sauce & veggies, Mac & Cheese, Creamy Pasta Bake), Chicken nuggets, Quiche
Honestly, I'd send that yogurt/applesauce/macaroni, and pack an extra outfit. How will she get better at eating those foods if she doesn't get to practice? It's well worth the hassle of some extra laundry.
Along the same lines, I'd tell your daycare to get over the "mess" of hummus. Kids are messy, and they should be prepared to deal with that!
