ntttcr: What is a good dinner party meal?

We are having 3 guests over tomorrow night for dinner, and I am still not sure on what to make. (talk about last minute, right?)

Any ideas are appreciated. :)

  • do you have a grill/is it supposed to be good grilling weather?

    lately we've been making either grilled steaks or grilled swordfish steaks, serving with some form of potato (usually a cheddar twice baked or roasted slices with onions and olive oil), and then some fresh summer veggies (corn on the cob or whatever else is fresh at the farmer's market).     summer meals are much easier, imo, since you can do simple, fresh foods.   

    if you want to cook inside, i'm always a fan of stuffed chicken as an entree, since you can prep it ahead of time.

  • My fav thing to do is make pizza dough, get a bunch of different topping, and then let each person make their own little pizza. You can grill them or bake them. Interactive and you can deal with picky eaters:)

  • Hmmm. I am always a fan of chicken. I hardly eat red meat but I have a million recipes for chicken items. Beef stew? Crockpot chicken parmagiana? 

    Casseroles? I have a great arroz con pollo recipe or one that is sort of like a cream of chicken rice soup casserole with almonds on top that is good. 

    And my staple side dish for steaks or garlic chicken are cubed bakes rosemary potatoes.

  • I usually go to the carniceria and get some carne asada and pollo asada to grill, and make my own homemade Spanish rice and guacamole.  Tacos, rice and beans with guac and salsa.  Always a hit.  :)

    After 2 rounds of IVF & 2 rounds of FET, we were blessed with identical twin girls!

  • How about grilling some steaks, and making a box of scalloped potatoes!  Quck and easy.  LOL  And you can buy a premade dessert.   No need to stress, it is a work day.

  • my chicken fajitas are always a hit.  throw chicken, pepper, onions, and seasoning in a skillet. .. the most prep work is just cutting the peppers and onions.   and you can make a cream cheese salsa dip. . .and homemade margaritas!!

  • Ditto the homemade pizzas!  We just did this a few weeks ago with two other couples at our house.  BTW - if you live near Trader Joe's, they have the BEST homemade pizza dough and pizza sauce.  I also buy some canadian bacon, pepperoni slices, pre-cut bell pepper slices, chopped onions, sliced mushrooms, etc.  It was super easy, and I actually had time to sit and relax.  I also made a spinach artichoke dip & picked up some of Trader Joe's awesome hummus dips & pita chips.  For dessert...ice cream :)

  • Use cheese raviolis, sauce and any other toppings put in dish and bake. It comes out tasting like lasagna but only takes 5 min to throw together.
