I stole it from a restaurant in Ellicottville (near Holiday Valley - being in WNY you may know where that is!) - but I think traditionally it is called a Pittsburgh Salad b/c they put fries on their salad there.
So bake a batch of the Ore Ida shoe string/fast food fries (I just do 2 servings for DH and I). Grill or broil/bake 2 chicken breasts (I usually marinade in a little olive oil, herbs, garlic, salt and pepper - whatever you like). Then assemble as such:
Fries on bottom (this is key b/c if you put them on top, then my DH just eats off all the fries and none of the salad - this way you have to dig for them!) of large salad bowl or plate, chopped romaine and baby greens, chopped veggies of your choice (for this salad: red onion, tomatoes, carrots, cucumbers and peppers work really well), sliced chicken, and sprinkle feta or shredded cheddar cheese.
We serve it with WishBone's Light French dressing. I don't know why - it just works with this combo really well. Although the tradtional Pittsburgh dressing is Riveria - but I can never find that and haven't made it.
According to Weight Watchers the salad is 7 points - without dressing. . .so not bad really. and it's yum.

ahhh ~ yes... Us from Pittsburgh may be a little strange ~~ but the Pgh. Salad is a great thing!
I can't believe it hasn't caught on other places in the country.
A sure fire way to make DH eat a salad!!
