    Not too sure...either hummus and veggies...or a salad and some fruit. I feel like I need to lighten up my meals.

  • I made a bunch of chinese chicken salad so I can break it out and take it for lunch all week long. Trying to spend less, and have a healthy option... we will see how it goes.

  • I personally love to prepare fritattas because I can add collards, cheese, potatoes, chicken etc. and he'll gobble it without a second thought.  Also it's great cold and I can cut it into strips/ squares/ triangles.
  • leftover Indian (chicken tiki masala and chicken vindaloo). We had leftover sauce so I just went out and bought some steamed rice down the street. yummmm!
  • Doh!  I thought that I was replying to the baby lunch post!  Lunch is falafel and veggie nuggets and I'm putting the turkey in the crockpot for dinner tonight.
  • Steamed broccoli (my cube mates probably love me...woops!), carrot sticks, sugar snap peas, applesauce, and a string cheese.  YUM!

    you know I never thought of hiding the veggies in eggs! great Idea. I am going to give it a try.
