Making Acorn Squash?

Anyone know the best way to cook this?  I want to cook and then puree for DS, thanks!

  • You can do all sorts of stuff with it! But, probably for baby, the best thing would be to bake it! Baking it allows the natural sugars to kind of carmelize and makes it SO yummy!

    Just cut it half, scoop out seeds, put face-down in a baking dish with about an inch of water and bake until soft. Scoop out the flesh and you can puree or use a fork and moosh it, whatever.

    But you can also peel and cut into cubes and steam. We did that when DS started on finger foods.

  • Any idea how long to bake it give or take?

    Also,I put it face down with an inch of water? Like in a 9by 13 or something?Thanks!

  • Depending on the size of the squash it will take anywhere from 30 mins to 1 hour. And yes face down in a pan like a 9x13 pan with an inch of water. Its super easy!

    Also, once you get addicted to this magnificient treat, you can do some awesome things to make it a grown-up dish, too. I like to roast and then stuff with a mixture of wild rice, dried cranberries, fresh sage, onions and occasionally some ground italian sausage (depending on who I am serving it to). This is awesome for a Thanksgiving side dish.

    We also like it with butter and maple syrup.

    I've also made it home-fry style! We just cube up and fry with onions and potatoes. It makes a really yummy "hash".

    Acorn squash is one of my favorite things in the entire world.

  • Sounds really good.  Okay, a question.  I just sliced mine in half.  It's pretty white inside.  Is that normal.  I guess I am just used to butternut squash which would be way more orange?  Thoughts?

    Hmmmm...white?

    Its definitely paler than butternut, but not white. Unless you have some sort of strange variety that I'm not familiar with. Is the outside dark green?

  • Yeah, there is a very pale orange glow to it - but very white looking.  I am wondering if it is not ripe? How would I know that? Also, if I cook it until it's tender, any harm in feeding it to DS, even if maybe it wasn't totally white?

  • Now that I've cooked it - it is more yellow than white.  Think it is still okay to use?

    Yup. It cooks up pretty yellow. not orange like butternut. It should be good to go! :)
