2-4 cloves of garlic, depending on personal preference
1/2 cup parmesan cheese
2 tbsp pine nuts, toasted
salt & pepper, to taste
Spin everything in a food processor until broken down, then drizzle in extra virgin olive oil until it reaches the consistency you like. I like mine a little thicker, some people like theirs thinner.
I usually serve with fettucine rigate - it has ridges that hold the sauce to it. Smooth pasta doesn't work so well.
Re: Pesto recipe?
Mine is easy-
make bowtie pasta (or something chunky that "holds" sauce)
make up some chicken- I usually just cut it into chunks and microwave it in my tupperware microsteamer, but honestly any method would work
make the pesto sauce
Mix it all together, add a little italian cheese. Voila, you're done! I usually will serve it with a salad or some steamed broccoli.
1 cup fresh basil leaves, packed
