Recipes for meatballs with vegetables in them?
It seems that all DS wants to eat lately is meatballs, meatballs, and more meatballs. I will gladly comply if I can sneak some veggies in them.

Funny you asked. Today I made meatloaf with grated zucchini & carrots in them. I used a fine box grater and it turned out great. Maybe a bit on the mushy side but I also used a lot of veggies.
I used the meatloaf recipe in my blog and I bet it would make yummy meatballs too.
Yeah! Did you try the cucumber salad with it? OMG that is so good. I need to make that tomorrow.
No, I put cucumbers and lettuce in with it. Tomorrow I'm going to the farmer's market on Larpenteur and getting more cukes to make that salad. I crave it everyday now like I crave pb sandwiches.
