We do mostly cheddar and mozzarella, because that's what DH and I eat and what we have in the house.
At this point, DS loves all fruits (it's easier for him to hold and eat a banana or whole apple or peach at this point than to chase pieces around a tray or bowl). Waffles are also a big hit.
We started out with shredded cheddar, and we've done mozzerella, a little parmesan (I think) some monterey, and a colby mix - all shredded. He's done fine (and LOVES) all of them.
Finger foods - mostly fruit (bananas, mango, pears, etc) - some bread pieces, some cut up veggies (carrot or sweet potato). We haven't gotten much beyond that.

DS has had tons of different types of cheese because I'll give him bits of whatever have, but I bought a block of organic mild cheddar just for him and he loves that.
As for other finger foods we do all the normals: fruits, veggies, puffs. He also likes black beans quite a bit and I just tried small pieces of soft cooked cheese tortellini.
