Marshmallow fondant makers

I know I'll have to make the fondant the night before I make the cakes. Here is my question/situation.

The party is on Sunday

I want to make the cake Saturday evening.

Do I cover the cake with fondant and then stick it in the fridge? Do I have to put the fondant on the day of the party? Which would be better?

  • You should cover the cake in fondant at least 24 hours before you plan to put the decorations on it.  Once the fondant is on, it's OK to leave the cake out.

    I dont like putting a fondant covered cake in the fridge because the fondant sweats and leaves water marks.  It can also bulge.

  • june - here's another question. do you wait 24 hours to put fondant decorations on top of fondant (stripes, shapes, etc?) also what do you use to affix them?

  • Ideally, I would.  That gives the base fondant time to dry up and it wont get finger marks, indentations and what not while you put the other stuff on.  You can use either food glue or water to glue the fondant decorations to the fondant base. I use water.
  • I would wait until the last possible minute you could to put it on. They say never to refrigerate it because it can crack and/or bleed from the dye. My suggestion would to be to make the fondant Sat night and prep the rest of the cake with butter cream and you can refrigerate that, but put the fondant in a sealable container then get up early Sunday morning and do the fondant, since it wont take that long and its already made.
