  Sorry - it takes a while for me to be able to respond - server at work is really slow when it comes to this site - GRR

   Yes, your crops will go to waste if you don't harvest them in time - I think the time to harvest them is the same time it takes to grow the crops - for example, grapes take 4 hours to grow, so once they are ready - you have 4 hours to harvest them.  If you don't then you get no money for the crops, and you have to replant the fields.
