Babies: 9 - 12 Months

Help me with dinner, please :)

I'm in a rut. I've got some boneless skinless chix breasts dethawed for dinner. I have no idea what I want to do with them. Help me. Embarrassed I need to go to the store b4 I head home, so anything goes.

  • How about making it teriyake chicken? With a side of rice.

  • Are you going to grill? If so pick up some Zesty Italian Dressing and marinate it for as long as you can then grill. Very Good! My husband swears by it.
  • grilled chicken w/ a side of asparagus and baked potato.

  • King Ranch Chicken? Or how about one of those chicken bakes? I think they are on the same isle as the mac & cheese & stuffing. It all comes in a box & you just throw them together.
  • If they are bigger breasts, pound them a little and slice them in two layers across.  Take each piece and dip in italian dressing and then in a mixture of breadcrumbs, salt, pepper, parm cheese and garlic.  Then roll each piece up and slice down the middle (to look like a pinwheel?), stick them on skewers and bbq.  YUM!

    This is YUMMY!!! Better if you can marinate it all day though.

    Another idea: salsa chicken. bake the chicken in the salsa and cover with cheese. serve with rice or beans

  • chicken parmesean.  chicken , breaded, smothered in spaghetti sauce and cook.  serve with noodles or rice and a veggie of choice. 
  • Get one pack of stove top stuffing, ranch dip mix packet and miracle whip/mayo.  (i don't like miracle whip/mayo at all, but use it on this recipe and you can't taste it at all - makes it super moist)

    Mix dry stuffing mix and packet of ranch dip mix. Coat chx in thin layer of mayo, roll around in stuffing ranch mix. Bake till no longer pink, melt a piece of cheese on top.

  • just brown them in a pan w/ a little butter and garlic and onion powder and whatever dried herbs you have at home.

  • i sometimes do a lemon parmesean chicken.  mix crunched up corn flakes with parsley and parmesean cheese (sometimes i throw in some garlic).  melt a few tablespoons of butter and add 2+Tblsp. of lemon juice.  dip the chicken breasts in the corn flake mixture and place in a casserole dish.  drizzle butter/lemon juice over top and cook @ 375 for about 40 minutes.  yum!  i usually serve with green beans or a salad.
