Hi ladies, I am not a big sea food person, but DH is. I found a great scallops recipe that I would love to make for him soon, but what should I make with the scallops?? They are called Southwestern Scallops.

Considering the fact that the closest thing we have to an ocean in the southwest is the mirage you see while wandering around in this damn heat.

If they have a spicy flavor, I'd put them on a bed of lettuce/spinach and make kind of like a taco salad with pico de galo, cheese, jicama, green peppers, cilantro, avocado, etc (oh- and some crushed tortilla chips for more crunch).
