We are members of a co-op and we get tons of veggies. ?I love cooking but I always end up wasting some of the veggies, b/c I don't know what to do with them...which is a shame.
Does anyone have any good recipes that involve cauliflower and/or arugula? ?They don't have to be in the same recipe. ?This just happens to be the two things I have left over this week. ??

You could make mashed cauliflower. This is the last recipe I used. My only suggestion would be to roast the cauliflower longer. It wasn't as tender and didn't 'whip' up the way it should:

We switch out cauliflower for potatoes from time to time. There are tons of recipes for mashed cauliflower - some are more 'fatty' than others (use of buttermilk or cream cheese in some).
You could make a cheesy, cauliflower casserole with maybe ham pieces and macaroni noodles or something.
Lots of summer cold salads for both use of the cauliflower and arugula.
I don't have any specific recipes on me but I have tried several of the cauliflower recipes from allrecipes.com
arugula pesto (same as basil, just replace with arugula)
roast that cauliflower in the oven with oil, S&P and red pepper flakes
I know what you mean - we joined a CSA last summer and I was often like, "what the hell am I going to make with beets and radishes???"
Rachel Ray does a cheesy smashed cauliflower - like mashed potatoes. I've always wanted to try that.
Yup. I have one for each. I'm not a fan of arugala, but this recipe for turkey meatloaf is good. I just don't do the sandwich part.

Ooooh, I thought of another one. I had this cauliflower dish at Zatiniya in Washington dc, it was amazing. I just looked it up and it was roasted cauliflower with sultana raisins, capers and pine nut puree. I don't have a recipe but it should be easy enought to throw together.

Looks like you don't have a lot of suggestions for arugula so far. I love arugula. It's a great spicy salad green. I'm making jerk chicken arugula salad tonight for dinner. Jerk seasoning rub or marinade and grill the chicken. For the salad: Steam and immediately cool 8 oz green beans. cut in half 1 cup of grape tomatoes. Thinly slice a red onion. Combine with arugula. For the dressing, any light vinegarette will do. I'm combining olive oil, lemon juice and wegman's basting oil. Serve salad with chicken on top.
Other ideas: you can mix arugula with any salad greens. You can put it on top of a pizza or flat bread.
