My girlfriends have said you can never have enough.
They get lost, dropped, & it's great to have them all over the place -- in the living room, in the diaper bag, clipped to the car seat & stroller, in the nursery, etc.
At any given time with DD#1, I had about 6 - 8 handy in her size. Of course, I was always losing them and dropping them so it's nice to have clean extras.
I would say that is enough for now. Especially since you don't know if LO will even take one. Why waste the money? If LO does take them, you will probably need a few more. It seems like one was always getting misplaced when DS was young.

I have 3 of the 0-3 ones and I plan to get a few more just b/c I lose things. If you are not prone to misplace things like me, I would say you have enough
I took a BF class last week and the nurse said that if you are going to be BFing, and might occasionally use a bottle (it can't be you giving the baby the bottle, anyone else but you or baby will refuse your breast next time) - do not give the baby a pacifier until after the first month because of nipple confusion. Just FYI.
