I'm sure it's disappointing to save something and then not see it used, especially when it has sentimental value. But - I'm sure any logical person would understand concerns about safety when things have changed so much over the years.
I would have said no too. Not only because of the safety issue, but also because I wanted a specific decor in the nursery. My MIL wants me to have the toddler bed that FIL, DH, and all his brothers used. Again, the bed is NMS, so my dh and I turned down her offer. We suggested she use it at her house when Zachary starts to sleepover. I think she was ok with that.
Sorry your IL's were offended. Hopefully they will come to realize that you turned down their offer for safety reasons.
I think it's okay to turn down used baby gear and furniture. I don't even think you need to justify your decision or defend it by playing the safety card. Especially if it's your first baby, I understand wanting to pick out something new that's exactly what you want. Part of the fun of having a baby is planning and decorating the nursery.
That said, I'm confessing to putting DD #2 in a 30+ year old crib. It's not something I would have even considered with my first baby, but my dad painted it and it's absolutely charming. I measured the distance between the slats and surprisingly the crib met current safety standards.
This was the crib all of my stepbrothers slept in when they were babies but it was revamped for our baby girl:
I voted no and I'm really laid back about used items. I am taking a used crib from the ILs. However, it's one that SIL was given for her first daughter so not nearly as old. Plus it was a really good crib ($800+) to start with. I'm also planning on using a cradle my FIL made.
My big boy is bounding towards 4! Baby brother coming in October!

i voted no. i've read the same things. fortunately no one tried to give us a used crib, though my mother did try to buy us one from a resale shop.
have you tried suggesting that they could set it up for when they babysit? would you be ok with that?
