Easy and yummy...
1 1/2 C. uncooked rice
1 can diced tomatoes
1 can corn
1/2 C. chopped cilatro
1/2 can green chillis
1 1/2- 2lbs boneless, skinless chicken breasts halved OR tenderloins
1 packet taco seasoning
2 1/2 C. water
1 C. shredded cheese
Combined the rice, tomatoes, corn, cilatro and green chilis in a 13x9 baking dish. Top with the chicken. Mix the water and taco seasoning and pour over the chicken and rice. Cover with foil and bake at 375 for 45 minutes. Uncover and top with cheese. Bake for 10 more minutes.

Probably want to defrost it so the rice doesn't dry out before the chicken is done. : )
Will try this one tonight. Unless DH decides to cook dinner.
