I had 1 (Baby Einstien one) and they both fit on it when they were both immobile. Once they were too big they were rolling and didn't want to be in/on it anyway.
I'd take it back because those things are way pricey. Wait a few months and then buy another one if you find you would really need it.

Anywho, I think it depends on the size of the mat. We have a Brightstarts playmat, it's huge. Both were able to play together on it for months. In fact, they actually still play with it. If your mats are smaller and can really only hold one baby, I say keep them both.
I have the baby Einstein Neptune acivitity mat which looks big enough for them both but i also have a bright starts one...i was thinking about exchanging one of the mats for a jumperoo...( i saw a bunch of people on here that said their LO's love it and we dont have one)
We got 2 and I'm just about to break out the 2nd one. We got the Giddy-Up something or another and it's a travel playmat. It's awesome. It collapses into a little tube shaped bag. It doesn't have the most exciting features, but you can hang other things from the bars if you want. It's the only one we've used so far. The other one is a monkey one and it looks more exciting.
After a PCOS dx, 18 months of trying, 3 rounds of clomid and 2 follistim IUIs our babies are here!
I have two and am thankful I do. They have come in so handy and the babies love playing on them. Plus it helped with rotating them so they had a change of scenery during the day.

One was enough for us, and if it were up to me I'd rather have the Jumperoo and activity mat!!! HTH!
BTW...once they are sitting up you can set up a blanket with toys if they are both too big for the mat.

We actually have 3 (we registered for 2 and we were given 1).
I would def. get 2 but get 2 different ones so you can rotate them and they see and experience different things.
