Need some meal help

DH and I are on a strict budget this month because my paycheck was short because of maternity leave.

We need healthy, cheap meal ideas that are non-dairy (I can't have dairy because I'm BFing, but I have a soy-based butter so I can use that).

    I make meat/rice/veggie combos all the time, and you can get fresh corn, squash, cucumbers, etc. at farmer's markets or something and just add them in.

     Bean burritos? don't know how they'll go over without cheese though.

  • Can you use soy cheese too?  I'd recommend black bean soup: 2 cans BBs + 1 can chopped tomatos + cheese + salsa.  Add cilantro and/or garlic if you want.

  • We're having french toast tonight, which is as cheap as eggs and a loaf of bread.

    Surprisingly, this is one of my favorite cheap meals. I don't ever make the sauce from stratch, though. I buy a jar of spaghetti sauce, pour it into a ramekin, crack a couple eggs over top, and top with some parm cheese. You couple totally leave off the cheese if you're avoiding dairy. I also serve it with garlic bread to sop up the sauce. Both DH and I were skeptical at first, but it's become a common dinner in our rotation.

  • We tend to eat pasta dishes or casseroles when we're on tight budgets - it makes enough for several meals and is cheap to make. Not sure if that's doable with your dairy restrictions though.
  • pinto's and corn bread (corn meal cheap).  make big batch of pintos (dry beans are super cheap) and turn half of it into chili (add canned tomatos, ortega green chilies, chili seasoning )  said chili becomes great topping for eggs for breakfast.

    There are some months we live at the 99cent store... ours carry fresh produce and great canned goods.

  • Just as a general suggestion, ground turkey is much cheaper than ground beef and it can be used everywhere you use ground beef.  I get the tubes of it at Wal-Mart for $1.99 each.  They are 1 pound, and we usually only use 1/2 of it per meal. I know Wal-Mart is the devil, but that is the cheapest place I have ever found ground turkey.

    You could also make a big batch of vegetarian chili and stretch it over several days.  Chili baked potatoes, chili mac, chili over rice.  I make my vegetarian chili like this: 3 cans black beans, 3 cans light red kidney beans, 1 large can diced tomatoes, 1 small can tomato paste.   Drain beans, dump everything in the crock pot.  Fill with stock (chicken or beef, whatever you feel like using) and season with red peper flakes and chili powder to your liking.  Turn on low all day or 4-5 hours on high.

    ETA: I have been known to dissolve a few bullion cubes in water instead of using stock on months where we're really tight.  You could also leave out the tomato paste if you want.
