yummy GD snack/side dish

I made a delicious tomato cucumber salad to go with dinner. ?It was 2 tomatoes, a cucumber, a healthy drizzle of extra virgin olive oil, salt/pepper & Italian seasoning. ?It was soooo yummy and definitely GD friendly!!! ?It was perfect until DH decided that it needed some vinegar... it is freakin NASTY now.. completely inedible. I am so pissed as I wanted to have it with lunch tomorrow! ?And I am out of tomatoes so now if I want it I will have to go to the supermarket. Ugh.

(BTW I had a huge serving of that, spinach (which is my all-time favorite vegetable!) and 2 peroggies (Sp??) and my sugar was 114 two hours after eating.?

    I love tomato and cucumber salads!  Except like your husband, I also put a dash of red wine vinegar.  I also like to add some thinly sliced red onion and just one clove of finely minced garlic.  So yummy and refreshing in the summer!

  • That sounds sooo yummy (vinegar and all!) except tomatoes send my numbers waaaay over.  Apparently they have a bunch of sugar, according to my nutritionist.  Glad it works for you!

  • That sounds YUMMY!  I have some cucumbers and tomatoes in my fridge - I think I might make this tonight and have it as part of one of my snacks tomorrow.  Thanks for the idea!

  • A SPLASH of vinegar would've been great..... he put a heck of a lot more than a splash!! ?When you taste it, all you taste is vinegar. ?it completely overpowers the rest of the ingredients!!!!! ?Silly DH.....

    And I have to say that my sugars are weird.... things that will kill most diabetics, don't bother me at all. The best example is pasta. ?I can eat a whole bowl of macaroni with any kind of sauce and I am totally fine. ?Put a pizza in front of me, however, and EEK! ?Bad news!?
