I think my hubby is nesting. He just called me to say he wants to spend the weekend cooking and freezing meals for after Madelynn is born. Fine by me! I'm trying to get some recipes and I'm finding a lot of heavy foods. I can't see us eating stew in July. Anyone have any good recipes or sites they'd be willing to share?

We aren't freezing any meals because I'm too picky with my food. I won't even drink milk two days before it expires let alone eat food that has been sitting in the freezer
I felt the same way anytime I searched for freezable stuff - it's all casseroles, soups, stews, etc.
We still made a bunch of that stuff, namely enchiladas and pasta-type stuff (spaghetti sauce, lasagna). I also froze bran muffins - lots of 'em!

You can freeze pizza dough for grilled summer pizzas (just add goat cheese and arugula; sauce and pepperoni; sliced potatoes, rosemary and chopped walnuts).
Marinara sauce with sauteed shrimp would freeze well and works easily over angel hair.
For cranberry chicken (great with wild rice), combine 8 oz Catalina dressing, 1 pkg dry onion soup mix, a 1 pound can of whole berry cranberry sauce and 4 boned chicken breasts, then freeze (all four together, 2 together or 1 each). Defrost completely, then baked at 350 for 1-1.5 hrs.

i had a friend that did that and LOVED it - - she has a cookbook full of freezer meals...not sure what it's called but i'm sure you could find one (or more) on amazon.com...
we're not freezing meals bcuz my mom is retired and live's 2.5 miles away so she'll be helping us with food - - and many other things!!

chicken enchiladas:
boil 4 chix breasts in 3c chix broth, 1 bay leaf, 1 tsp oregano, and 1/2 an onion for about 10 min. remove from heat. SAVE THE LIQUID (I always forget that part!). Shred the chicken and place in bowl with 1/2 c of cooking liquid, 2 tblsp tomato paste, 1 tsp chili powder, 1 tsp cumin, S+P. In another bowl, thin the tomato paste with cooking liquid to make a sauce. Spread sauce in a baking dish. Roll filling in tortillas. Place seam side down in dish. When you're ready to eat you can defrost them, cover w/ cheese and cook @ 350 for 20 min. Or just throw them frozen in the oven- 350 45 min, then top w/ cheese and cook till melted.
Variations-- add some chipotle in adobo to make the tomato paste sauce and filling a little spicier, don't make the sauce at all and just freeze the enchis in ziploc bags. To save a little coin- use a mix of breasts and thighs. ALso- Just freeze the shredded chicken and use it for taco night.
I froze a TON of premade burgers too, and made stuffed shells using ground turkey and spinach...keeps it light.

Mix:
bow tie pasta w/
rocatta cheese, moz. cheese, spegetti/meat sauce, spinach, garlic, and parmesan. Bake to bubbly when ready to eat. It is like lasgna caserole.

That's funny.... my DH just said the same thing the other day! Weird.
I think we're going to make baked ziti, turkey/artichoke stuffed shells, and chicken enchildas for sure. Maybe mroe if we come up with more ideas.
