I cook mine on a cookie sheet with a little EVOO on around 400 then turn it down once it looks mostly cooked. I don't defrost mine either. I also put aluminum foil over the sheet as well (easy clean up). I don't cover them.
I dip it in buttermilk (or milk and egg, or yogurt, or ranch dressing, etc.) then in crumbs of some kind. I drizzle a little olive oil on it and bake at 350.
Whether I cover or not depends on how long it's baking, so really, on what cut it is. Bone in, yes, usually 30 minutes covered, 10-15 uncovered. Boneless, no, usually uncovered.

Sometimes I do them just in chicken broth with a little salt and pepper at 350 for 30-40 mins.?
