First, I need cheap dinners for two. Going grocery shopping tomorrow and since I've made a few baby splurge purchases lately, the budget is tight. I already have spaghetti on my list, what else? I need low cost, not many ingredients.
Then, its our turn to host family dinner night with DH's family. This is 5 adults and 1 child, so semi-kid friendly is a must.
Then, we're going to our family reunion at the lake condo. Each family has to cook one night. 13 adults, 3 kids...again, kid friendly is a must.
I appreciate your ideas in advance!
Re: Cheap dinner ideas...for 2, 6, and 16
For two: I like kielbasa and rice personally. You can always add in frozen veggies too and freeze the rest. Also, you could make personal pizzas using the small boboli crusts. We make fantastic BBQ chicken pizza using those.
For 6: Any pasta dish. Maybe a baked ziti, lasagna, or even goulash. Add in some meat and cheese and crusty bread and viola. Cheap and easy.
For 16: Why not do a weenie roast? Do hotdogs and sausage that can be put over the fire and then have a few side dishes? Chips, salads, etc?
For family or family reunion night: Breakfast for dinner. Can't get much cheaper than scrambled eggs, toast, pancakes, and sausage or bacon.
DH and I eat a lot of rice and beans. All recipes.com has good ideas.
A Pocket Full Of Dinosaurs
for 2: fettucine alfredo - buy a knorr powdered sauce mix, box of fettucine. Make garlic bread, salad or veggies on the side. Add shrimp or chicken.
for 6: chicken fingers, roasted potatoes, grilled veggies (tomatoes, peppers, mushrooms, zucchini, onion chunks, etc.) on kabobs or loose.
for 16: tacos or taco salad - lettuce (2 heads), tomatoes, shredded cheese, ground beef (get a club pack size and use 3 pks of taco seasoning), salsa (get 2), chips (get 2 bags), sour cream (get 2), avocadoes/guacamole (make ahead if you can)...
Here's my favorite dish to make for larger groups. Very kid friendly too.
Pizza Casserole
2 lbs ground beef or turkey
(I use turkey because it's lower in fat/cal but it is also much cheaper and with the sauce you can't really tell the difference)
2 jars of pasta sauce
1 box pasta shells or penne
1 pack of shredded Italian cheese
1 pack of pepperoni
Brown the meat, and cook 3/4 the box of pasta. Mix the meat, pasta sauce, and pasta. Layer in a large casserole dish. Cover the top with pepperoni then sprinkle cheese on top. Cook at 350 for 30 mins.
Can be made ahead and frozen.
I just posted a recipe here that is super cheap!
