DS usually has a turkey and cheese sandwich on whole wheat bread, grilled cheese, a veggie burger or pasta/cheese/veggie thing. I usually give him fruit with lunch - blueberries, strawberries, cantaloupe, bananas, etc. If he's still hungry, I'll give him some cheese or some goldfish.

Do you cut the sandwich up, or just half/triangle it?

I usually cut the sandwich up into manageable pieces.

We eat at home, but i pack the same thing even if we're going out and i have to give her lunch while we're out. Grilled cheese or peanut butter sandwhich cut into small pieces, and a fruit (1/2 banana, a container of mandarin oranges, strawberries sliced up), then i give her some Kix cereal, cheerioes, or goldfish if she still wants more to eat.
These are not ideal for everyday lunches, but I found new Kids Lunchables for lunches on the go. Chopped ham, cheese & mini ritz crackers. DD loves them!
We eat at home, but he loves PB/jelly sandwiches (I get the simply fruit jelly-it is so good and without the artificial crap), grilled cheese sandwiches, cheese/spinach/chicken in a whole wheat tortilla (quesadillas), bagels--(they could add cream cheese there), cinnamon raisin toast, string cheese, pasta with parmesan and butter, and a fruit: banana/strawberries/kiwi.

We do veggie burgers, tofu dogs (he likes smart dogs the best), homemade chicken nuggets/strips, pasta with spinach and sausage, or PB&Js. I also send a fruit and a veggie.
Their lunches normally consist of beans, veggies/fruit, cheese and a sandwich-type thing. (no cheese if it is a meat sandwich for us, or if I send them in with a cheese sandwich)
For meat-I take a chicken and a cup of water and put it in the crockpot for a few hours until it falls away at the bone.I break it into small pieces. It yields a lot and I freeze what we are not immediately eating.
I mix it to make chicken salad, or I give it to them plain small pieces. They really love it.For chicken salad, either on wheat toast (cut into fours), or they make mini wheat pita pockets and I half, fill with salad and give to them.
I am thinking of trying beef in the same slow-cooked fashion. Maybe a really broken-up philli-steak sandwich (in a pita) with peppers (minus the cheese)
I make mini-wheat pita pizzas, mini bagel pizzas, cut up into pieces.

Hummus or cream cheese, in pitas.
I am big on the pitas and mini bagels....
Leftovers from the night before - pieces of chicken, pork chops, meatloaf, spaghetti
Otherwise- PB&J, mini cheese or beef ravioli, homemade chicken nugget balls, meatballs, turkey/chicken hotdogs, macaroni & cheese w/ or w/o tuna
Also always a vegetable & a fruit - broccoli, carrots, peas, corn, greenbeans, grapes, strawberry, pineapple, raisins, apple, pear, pumpkin, squash, potato, sweet potato, blueberry
For a snack I pack stringcheese, cheese cubes, goldfish, cereal bars, fruit leather, dry cereal, crackers, animal crackers, yogurt, dry fruit, applesauce
Usually dinner leftovers - salmon, tuna, shredded chicken + veggie (brocoli, green beans, asparagus spears)
Then, I add two of the following: string cheese, banana, quarter of an avocado, yogurt or cottage cheese for snacks.
