Cake decorating ladies...help!!!

I am making my first-ever wedding cake for my aunt, the wedding is the 19th.  I am still trying to find a good filling recipe. I tried to make the Wilton raspberry cream filling today and it was a huge FAIL. It reeked, and when I tasted it I almost vomited. Seriously, it was horrible. I just found a Light Raspberry Mousse recipe on cakecentral but was wondering if any of you had any recipes for a raspberry filling that you like. Thanks!

  • My mom and I like to use a simple raspberry jam and line the each layer of cake with stiff buttercream to keep the raspberry jam from leaking out. We only use that w/ chocolate cakes though b/c if you have it with any light colored cakes it will bleed into the layers.

    Also, I highly recommend King Arthur Flour's Raspberry Mousse Mix..and add just a few raspberries to the mix to give it some freshness.

  • at our local cash and carry you can buy the filling in BIG tubes. They aren't that expensive either.
