3rd Trimester

Healthy lunch ideas

Ok, I just had McDonalds for lunch and it MUST stop (well, at least taper off). ?I thought I would start 3rd tri off with a new lunch plan (I have breakfast and dinner down ok). ?I have been eating a lot of hoagies and soup and I really want to eat healthier lunches that are higher in protein and lower in salt.

What do you ladies eat that seems to work for you and be healthy??

Re: Healthy lunch ideas

  • Honestly, during the week, I eat mostly salads for lunch. I add flavor to them with roasted veggies, lots of crunch with croutons or tortilla strips. I've recently discovered that I like a few sunflower seeds thrown in it. Sometimes I add chicken or fish. I try to switch them up a lot but this works for me since I tend to eat more carbs in the morning at breakfast and snack more in the late afternoon, evening. I don't feel like I've overeaten with salads for lunch.

  • Salad. Add low sodium dressing or just use lemon juice or salsa instead. Add lots of veggies or even fruit and nuts.
  • What about a healthy pasta salad?

My latest fav. one to make (I make a huge batch and then we take it for lunches) is my greek pasta salad

100% whole wheat rotini pasta (I like WF brand, most others are like cardboard to me)

    artichoke hearts (cut into fours)

    beats (sliced)

olives (Whole Foods' olive bar has a greek blend of different ones thtat are great!)

    cucumber

Then I toss it all w/ greek dressing.

You could add chick peas or something for more protein.

  • Sandwiches for me or soup and salad. Panera has a turkey/artichoke sandwich that is beyond heaven.
  • I like to make extra of whatever was for dinner and then just heat up the leftovers.  I hate having to make something for lunch in the morning like a salad or sandwich so this seems to work the best for me.  Like if I make enchiladas I bring an extra in tupperware for my lunch.  Or often I want tacos (can you tell I'm craving Mexican food) I will make an extra one for lunch.

  • hmmm maybe I could go the salad route and add chicken or cottage cheese. ?I really want to get the protein in there. ?My doula and hypnobabies is stressing get a LOT. ?Plus if I don't eat enough, I get sick. ? Of course that means cooking chicken breasts, but I guess I could make a few extra at dinner.
