Parenting after a Loss

Meal ideas for health nuts?

My dad and his wife are coming tonight for 2 nights and they are total health freaks.  DH and I are... not!  I mean, we eat what we have time for.  Sometimes it's a healthy meal, most times it's cereal or pizza.  It's just our life right now.

Tomorrow night DH and I are going out to dinner, so I need something the 2 of them can make or heat up while we're out. 

Any ideas? 

ETA: They've been married for about 10 years and this is the first time his wife is coming to our place.  We do not have a relationship of any kind, so I'm not looking forward to this visit.  When I was younger and would visit them in Florida, they never had any food in the house and they spent the majority of their time working or working out.  My dad and I have a nice relationship now, but it is very much between the 2 of us.  Just a little background info!  I guess I want them to have food, but I'm not too concerned with providing them with a variety of tantalizing options:)

  • Hm, we eat a lot of fish or shrimp which is so easy to prepare.  You could mix up some stir fry stuff for them and then all they would have to do is microwave the rice and throw all the meat and veggies into the pan.  I usually do shrimp, a little garlic, and lots of veggies (broccoli, carrots, green onion, bok choy, snap peas, etc.) and it only takes about 10 mins or so to cook.  Add a little soy sauce and any other sauce you may have on hand it turns out great!

  • I saw a side dish somewhere that was Grilled Zucchini- you cut it in half long ways, brush alittle EVOO and maybe alittle garlic then stick it on the grill...

  • Since it is summertime, my husband and I eat a lot of grilled vegetables (zucchini, summer squash, red bell peppers,asparagus, etc.).  Roasted asparagus is also very good.  Grilled chicken and salmon are also staples for us.  I really like tabbouleh in the summer too (my husband isn't crazy about it though).  Good luck!

    How sad is this?  See all those magazines stacked in the center?  All Cooking Light.  I used to be so good at this!  I seriously can't bring myself to get them out and come up with a great meal for them though... I don't even do it for us.

     DH and I are the king and queen of fast food and pizza so I hear you! Maybe pick up items for the grill like the pp mentioned. Thats easy!

  • don't stress about it; you said you have a good relationship with your father, just ask him.  I go through this all the time as i'm a vegetarian and DH isn't.  However, since spencer was born, we have had many nights of cereal, pb & J, or pizza.  it's just easier after a long day of work and wanting to get every minute with Spencer before he goes to sleep.  GL!
