It seems like all we ever eat is boneless, skinless chicken breast. The problem is that I'm out of EASY ideas. Usually I just pour some bbq sauce on it or put some onion/chive cream cheese over it or pasta sauce and mozzarella. That's about as fancy as I get...what else can I do? Occasionally I'll roll chunks of chicken in crushed potato chips and bake homemade chicken nuggets. Help, I'm out of ideas. I'm a sahm who doesn't like to cook, so the more basic, the better. My dh just got me a crock pot for our anniversary (talk about a stereotypical husband-to-wife gift) - I can handle putting chicken and 2 or 3 other things in the pot, but that's about it. Thanks!

Pour Pesto on top of raw chicken, sprinkle parmesan cheese, and pine nuts. Cook until done!
I'm going to do it with Bruchetta next time, and just leave out the pine nuts.
I want to try this:
Mexican Crock Pot Chicken:
2-3 chix breasts
1 can diced tomatoes
1 can black beans
1 pkg taco seasoning
1 can black olives
1 can chopped green chilies
Layer chix on bottom of crock. All all ingredients. Do not stir. Cook on low for 7-8 hrs. Take chix out to shred then return to crock. Mix weel & serve with tortilla chips or shells. Top with sour cream, cheese, lettuce, etc.

Cheesy Crockpot Spanish Chicken
frozen boneless, skinless chicken breast
10 oz Campbell's Cheddar Cheese Soup
10 oz Campbell's 98% Fat-Free Cream Of Chicken Soup
12 tsp McCormick Taco dry seasoning mix
Place chicken breasts in the crockpot. Mix the undiluted soups together with the taco seasonings and pour over chicken. Cover and
cook on low 8 hrs. Serve over rice or a baked potato.

BBQ Pulled pork
1 pork roast or loin
1/2 bottle root beer
1 onion, diced
Salt & pepper
1/2 jar BBQ sauce
Place the pork tenderloin in a slow cooker, put any seasonings you want on, and onion over the top, then pour the root beer over the meat.
Cover and cook on low until well cooked and the pork shreds easily, 6 to 8 hours
Drain well. Stir in barbecue sauce. Cook on low another hour to get flavors to soak in, serve over hamburger buns.
This is my favorite recipe. I got it off recipezaar.com a while ago and it's my favorite go to crockpot meal.
i too do not like to cook and like things nice and easy!
ricearoni.com has some easy ones. i buy the 'chicken' rice a roni box:
follow the directions, but add 2 cups of water instead of 2 1/2 cups (the recipe online says all this). bring to a boil.
-add the uncooked chunks of boneless chicken and sprinkle some basil
-simmer (15 min?)
-add diced tomato and cheddar cheese on top, cook another couple minutes and wa-la!
cut up chicken breasts into bite size pieces and put into 9x9 inch pan
cover with italian dressing
add a drained can of mushrooms and stir
sprinkle with paprika
bake at 400 until done - usually about 20 minutes, sometimes I stir in the middle of cooking it, sometimes I don't.
you can sprinkle some cheese on top right at the end if you want to.
Easy! DH LOVES it.
I will make some veggies with it or one of those seasoned pasta things.
Baked chicken parmesan
Preheat oven to 350 degrees.
Season chicken breasts with salt & pepper; dip in a bowl with a beaten egg and 2 tablespoons of milk; dip in a bowl of Italian-seasoned breadcrumbs; place in a greased baking dish and bake 10-12 minutes until nearly cooked through and crispy. Remove from oven. Spoon your favorite spaghetti sauce over the top of each breast and spinkle on mozzarella & parmesan cheese and return to oven for 5-6 more minutes until sauce is heated through and cheese is melted.

Baked chicken and rice:
Stir together:
Spray a 9 x 13 baking pan with cooking spray, and pour mixture into pan. Place cut-up chicken breast pieces on top of the mixture (I use one pkg of boneless, skinless chicken breasts, cut into large chunks). Sprinkle half a packet of dried onion soup mix over the top of the entire casserole. Cover with foil. Bake at 300 for 2 hours.
I love this recipe because it takes literally minutes to throw together, so I can do it during DD's afternoon nap, and then it bakes until dinner time. We usually have it with a salad and a veggie, like broccoli.
