Memorial Day cookout dessert??

I need something simple to bring to a cookout tomorrow...I was thinking of making a watermelon boat but I really don't want to stand there and ball a bunch of melons. hahaha

Any ideas for something easy?

  • Strawberry shortcake (kind of) - sliced strawberries, chunks of angel food cake (just rip it in bite sized pieces) mixed together with cool whip.  Easy and yummy!!

  • Look up pretzel salad. It's a layer of crushed, buttered and sugared pretzels on the bottom, then a layer of a cream cheese and whipped cream mixture, and then a layer of strawberry Jell-o on top. I slice bananas on top of that right before I serve it too. It's very quick, very easy, and soooo delicious.

    Chocolate peanut butter cake squares are simple and delish, and always a hit at picnics. Cake on the bottom, then a layer of p.b., then chocolate. If you've ever had a Tastykake, they taste exactly like that.

     

     

  • I'm making these easy lemon cookies that start with a cake mix.
  • At the dr. office yesterday I was reading Better Homes and Gardens and they had this recipe for strawberry bars. The base is a rich peanut butter with a strawberry jam and strawberry topping. It didn't seem too difficult to make -- and looked very seasonal and tasty! Recipe is below:

    Ingredients

    • 3/4  cup butter, softened
    • 3/4  cup peanut butter
    • 1  cup packed brown sugar
    • 1/2  cup granulated sugar
    • 2  tsp. baking powder
    • 1/4  tsp. salt
    • 2  eggs
    • 1  tsp. vanilla
    • 2 1/4  cups all-purpose flour
    • 1/2  cup strawberry jam
    • 4  cups small whole strawberries, halved or quartered

    Directions

    1. Heat oven to 350 degrees F. Line 13x9x2-inch baking pan with foil, extending foil beyond the edges. Set aside.

    2. In large mixing bowl beat butter and peanut butter on medium to high for 30 seconds. Beat in sugars, baking powder, and salt until combined. Add eggs and vanilla; beat until combined. Beat in as much flour as you can with mixer. Stir in remaining flour.

    3. Spread dough in prepared pan. Bake 25 minutes or until top is lightly browned and toothpick inserted near center comes out clean.

    4. Cool completely on rack. Remove from pan by lifting foil. Spread jam and top with berries. Cut into bars. Serve at once or refrigerate up to 6 hours. Makes 24 bars

    Make Ahead: Wrap the peanut butter base in foil; store at room temperature up to 24 hours. Before serving, top with jam and berries. Or freeze the peanut butter base in a freezer container up to 3 months.

     

  • I've been making strawberry rhubarb everything lately.

    I have a pie on my blog and will be putting a crisp up sometime later today.  Neither are difficult, but they do take some time.

  • I make banana pudding that is SO easy and everyone loves

    2 small pkgs vanilla instant pudding

    3 cups milk

    1 can sweetened condensed milk

    1 large cool whip (12 oz I think)

    3 small bananas sliced up

    1 box Nila Wafers

    mix the pudding and milk and set aside to thicken. (chop up bananas while you are waiting). Add in sweetened condensed milk and fold in coolwhip and bananas

    Line a pan with nila wafers and poor pudding over them and then top with nila wafers. It is best made the night before so the wafers get more "cake-like"

  • I love love angel food cake with a frosting of whipped cream, strawberries and bananas.  Very light, fresh and springy!
  • if you go on the Kraft foods website, they have a ton of easy desserts that would be perfect for a Mem Day cookout.

    Do this - it is super easy and CHEAP!!! And super yummy

     

    Buy 2 boxes of ice cream sandwiches, 2 containers of cool whip and a pack of heath bars

    First in a plastic bag - crush up the heath bars with a food mallet or something so it is crumbled

    In a sheet cake type of pan (I buy a foil one about 9 x 13 and extra deep) line the bottom of the pan with the ice cream sandwiches (may have to cut a couple in half to fit) then layer on some cool whip and then some crumbled health bar - do one more layer of everything...refrigerate to set for a few hours - DONE!!

    I do this one too, but I put a layer of caramel ice cream topping over the ice cream sandwiches.  Another option is to use cookies and cream ice cream sandwiches, chocolate ice cream topping, cool whip, and crushed oreos on top.

  • There is a kraft recipe with pound cake, cool whip, strawberries and blueberries in the shape of an american flag that is usually a hit!

    I think I'll go for one of the strawberries/angel food cake/pudding ones for tomorrow, but I'm DEFINITELY trying the ice cream sandwich conncoction when I know I will have a fridge to store it in!
