I've been eating rhubarb almost every day and I just came across this as I was looking for some recipes.
Because of its putative effect as a uterine stimulant, rhubarb is not recommended during pregnancy.
Yet it contains a high amount of folic acid and is used to treat pregnancy induced hypertension...
Re: Hmmm...food I shouldn't eat...I'm in trouble
ask your doc to be sure, but you DO have a new recipe to try out!
I'd say maybe eating less- in moderation...
I'm trying that recipe this weekend. I was just poking around looking for a strawberry/rhubarb pie.
I eat like a piece every other day. At least when I make the pie, I'll be using a lot of my stalks.
At least I know I'm getting extra folic acid, which is a bonus.
Not too many people I know have had it. I happen to think it's very tasty, but I'm going to talk to my doc to see what she says about it. I've been eating it for the past 2 weeks, and if she tells me there is a risk, then I won't have it as much.
there ya go! see? positives!
I think from what I'm googling it looks like you want to stay away from rhubarb extract or any herbal tincture made from rhubarb... these would be a lot more concentrated than fresh cooked or baked rhubarb.
I love rhubarb too. It always pops up here at the Farmer's Market and it's surprisingly versatile.
