GD mamas- good low carb snacks?

I need some ideas here, because I am constantly starving these days! I need some healthy, low carb snacks that are both filling AND won't cause my sugar to spike. ?Any ideas??? I've been eating cheese (sometimes with crackers) and peanut butter on crackers too, but this just aint cutting it. ?I could eat an entire 1 lb brick of cheese myself.....

  • yogurt with granola, grapes, watermelon, apples with peanut butter

  • I love watermelon, but isn't that considered a "high-sugar" fruit? I'm afraid of how high it will raise my sugar. ?

I saw a different person at my last appointment, and her lecture about "too much fat" irked the hell out of me.  Cheese, meat, peanut butter, avocado--these are the only things keeping me sane.  Only fat makes me feel as full as carbs used to.  (I wasn't overweight to begin with, and I'm not now either, so I wanted to tell her to blow it out her a**!)  I think within reason, you should definitely keep eating cheese!  Plus we're supposed to get 1000 grams of calcium a day (mg?) and I don't drink milk, so.

I do a yogurt smoothie sometimes, but it doesn't fill me up.

Also, when I have cheese and crackers, I have triscuits (limit 10), and that seems to fill me up best.  Or a quesadilla

  • For my guilty pleasure low carb snacks: sugar free popsicles, sugar free fudgsicles, sugar free flavor ice, roasted nut granola bars and sugar free cookies by Murray's.  I also love nuts, cheese and pepperoni - good sources of protein too.
    Our miracle IVF baby - D 6/09 & J - Surprise! born 9/10!!!
  • I munch on celery and peanut butter, cucumbers and ranch, carrots and ranch, summer sausage and similar items, cheese, peppers (green, red and yellow) are great with taco dip...actually, who am I kidding? I eat taco dip all on it's own. Both with and without meat. Cub Foods sells a "southwestern" dip that's awesome. I also eat sugar free jello and popsicles, as well as crystal light, all of which are carb free. I've also been known to eat a hot dog or two when nothing else is around.

For low-carb, I do fruit (an apple, pear or berries), a light yogurt, crackers and cheese, sunbelt granola bars (chocolate dipped chocolate chip are 29 grams and don't make me spike), no sugar added ice cream (Blue Bunny vanilla or Edy's mint chocolate chip are the best and don't make me spike). I also do a tortilla with cheese (quesadilla anyone?).

    Hope that helps!

I keep a pack of low-salt cashews in my purse for emergencies.  There are carbs in the cashews, but there's protein too.
  • I like hummus with carrots or a few baked pita chips.  Edamame or even a whole wheat tortilla with melted cheese.

  • Try to get two food groups when you choose a snack, this will really help with burning up the carbs.  Fruits should be eaten with a protein.  For snacks, I love to have apples and peanut butter (or cheese).  But even banana with PB would be good.  Watermelon is a high-sugar fruit as is banana but if you can get a protein in there with it, it won't be as bad.

I love to do yogurt with a bit of granola or kiwi, strawberries, raspberries, blueberries, etc.  Berries are a low-sugar fruit so they are a good choice.

I've also started to enjoy a rice cake with peanut butter and raisins.  I eat cottage cheese for snack a lot (sometimes with cucumber or something chopped up in it), carrots and humus or ranch dressing.  Almonds and other nuts...

This is also what my nutritionist said!  I am diet controlled, so I can get away with eating more fruits, which is great because bananas and apples seem to be my staple these days!  A snack I like to make is edamame!  I bought a large box of microwavable packages so I can enjoy them even if I am at work!

  • I like string cheese, and have found I prefer the name brands like Sargento to the store brands (just personal preference).

South Beach cereal bars - 10 g of protein and low in carbs, plus they actually taste good.  I've tried the Cinnamon Raisin, the Peanut Butter and the Chocolate and I like them all, not to mention how portable they are.  Kashi bars are a good choice too - much lower in sugar than regular granola bars.

Mixed nuts are a good snack.  I measure out a 1/4 or so and keep them in either snack size baggies or in little tupperware containers for a quick snack (without mindlessly consuming handfuls right out of the big jar)

Giada de Laurentis (Everyday Italian) has a really, really good white bean dip recipe that works with either pita chips or raw veggies.  Even my niece and nephew went to town on this stuff:  https://www.foodnetwork.com/recipes/giada-de-laurentiis/white-bean-dip-with-pita-chips-recipe/index.html (Note - I add the lemon zest to the dip as well, and go easier on the parsley)
