Sadly, it's disgusting how much delivery we've had around here lately. I'm making one of my favorite dishes, but I just don't have the energy to get up and make it.
Salsa (original recipe calls for a can of green chiles, but salsa is just easier, in my opinion)
***You can substitute ground turkey, and fat free sour cream/cottage cheese if you want.***
In a pan, brown ground beef. Add can of tomato sauce. I also put in some garlic powder & minced onion to give it more flavor. Put to the side. Mix cottage cheese, sour cream and salsa in a mixing bowl. I put in enough salsa to make the mixture a pink color, but it's up to you for how spicy you want it.
In a casserole dish, layer broken up tortilla chips, then meat mixture, then sour cream mixture, then cheese, then repeat. I make 2-3 layers, depending how deep the dish is. Save some tortilla chips and a bit of cheese to garnish on the top.
Put in the oven at 350 degrees for 35 minutes or until the cheese/chips on the top look crispy and the edges begin to brown. Let it sit for 5-7 minutes to settle, then serve! If you want, you can top with more cheese, sour cream or salsa.
