Peach Crepes (PIP & Recipe)

FOR THE FILLING
1 1/2 c Fresh orange juice
2 tb Cointreau liqueur
4 Peaches, peeled and thinly sliced
1 ts Agave nectar
1/2 ts Ground cinnamon

CREPE INGREDIENTS
1 eggs
1/4 cup goats milk
1/4 cup water
Vanilla extract
1 tablespoon butter, melted
Nutmeg
1/2 cup all-purpose flour
1/4 cup of powdered sugar
1/8 teaspoon salt

  • 1) In a large mixing bowl, add together the milk and water, stirring to combine. Add while whisk together the eggs, vanilla extract and butter.

    2) Gradually add in the flour, powdered sugar, nutmeg and salt; beat until smooth.  Set aside to make filling.

    3) For the filling, combine the orange juice, liqueur, peaches and agave in a medium frying  pan. Cook for about 10 minutes or until the liquid turns thick and syrupy.

    4) Cooking the crepes: Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

    5) Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

    6) To assemble, lay a crepe on an individual serving plate. Mound 1/3 cup of the peach slices on the bottom half of each and flip the top half over. Spoon a tablespoon of the peach syrup over each and dust with cinnamon and optional powdered sugar.
