My husband has to go to Charlottesville for the weekend in a few weeks. I'm wondering if it would be worth it for us to go with him. He'll be working most of the time, so we'd need to entertain ourselves. Are there any fun baby-friendly activities I should look into?

Ditto the wineries, although it's not exactly baby-friendly. Not that it's stopping my playgroup from planning a wine tasting play date. =D
I ditto the Downtown Mall as a fun place to people watch, shop, etc. We have a few parks, too.
There's TONS to do in C'ville, especially if the weather is nice, which it should be by then. The UVA grounds (fyi: don't get caught calling it a campus) is GORGEOUS. You can walk the grounds or there's a nice little area of shops in an area called The Corner. There are plenty of parks. The downtown mall is great, plenty of shops and restaurants and a big field at one end (unless they've built on the field since I've been). They also have lots of outdoor concerts and stuff there.
I recommend touring Monticello which is Thomas Jefferson's estate. It's very pretty there and it's not that expensive to go.
How old is your baby? There is a great kids museum at the end of the downtown mall - my son has loved it since he was about 1.5 and it's still one of his favorite places.
there are plenty of parks, one with a wading pool called McIntire Park. There are lots of places to eat and enjoy, a coffee shop called C-ville coffee has a nice play area and a giant turtle to crawl around on, over, through. You'll have a blast!
