Most of the T names I thought of have already been mentioned. But what about Tamsin or Taylah? I know a Taylah and I think it's really sweet.
I'm really sorry about your grandmother. Why don't you just use Toby? I don't see anything wrong with it for a middle name. I don't think that using the same letter would honor her quite as much as actually using her real name.
